Brown Butter Double Chocolate Chip Cookies

These brown butter double chocolate chip cookies have become a favorite among my friends and family, and for good reason. Browning the butter adds a rich, slightly nutty depth of flavor that you just don’t get from a traditional chocolate chip cookie, while two kinds of chocolate make every bite extra indulgent. I finish them with a sprinkle of flaky sea salt because I love the contrast of sweet and salty. It brings everything together perfectly. Crispy around the edges, soft and gooey in the center, and just a little elevated from the classic cookie we all know and love.

Ingredients
- 150 g unsalted butter
- 100 g light or dark brown sugar
- 60 g granulated sugar
- 1 large egg, room temp
- 1/2 tsp vanilla bean paste
- 150 g all purpose flour
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 110 g 70% dark chocolate chips
- 110 g semi sweet chocolate chips

Preheat your oven to 350 degrees Fahrenheit and line your baking sheet with parchment paper

Brown 150g of unsalted butter over medium heat until the butter smells nutty and turns a golden brown color. Be sure to stir constantly so the milk solids don't burn. Once brown, move to another bowl and allow to cool.

In a large mixing bowl whisk together 110g brown butter, 100g brown sugar, 60g granulated sugar.

Add your egg and whisk until thickened and mixture has lightened in color. Add the vanilla.

In a separate bowl whisk together 150g flour, 1/4 tsp baking soda, 1/4 tsp baking powder, 1tsp salt.

Add the dry ingredients to the wet ingredients and mix with rubber spatula until just combined. Do not over mix. Add chocolate chips and mix once more.

Scoop 60g of dough and roll into a ball. Place balls on a baking sheet and cool for at least 1 hour.

Place 5 balls on the baking sheet with space in between them and bake for 12 minutes. Top with flaky sea salt.

Allow to cool on baking sheet for 5 minutes then transfer to cooling rack and cool for another 5 minutes.
